We all need our minutes of fame I guess. Anyway, when I lived and worked in Mississippi, Penrose hot sausage was always in a gallon jar on the bar counter next to a gallon of dill pickles. When the jars were empty the owners wife boiled a couple dozen eggs and put them in the gallon jar. She poured Half the sausage juice and Half the pickle juice over the peeled boiled eggs. They sat right there on the bar next to the sausage and eggs, We sold alot of them, with a side of individually wrapped saltines. mmm...good. The first 6 bits are ok, but after that the heat increases until its finished. The after burn lasts about 20 minutes after you finish it, but its a good burn/pain. There great and always have great texture. I tried this one before and it didn't fall apart as the one in the pic did. I liked the fact that it was a spicy sausage. It started with the fircracker at the qwik shop down the street. Then it went to jars of Resers pickled polish sausages in glass jars. Yes tijuanna mamas are good so are screaming demon,fire cracker,hot head, big mammas etc. The best is still Resers in the jar. They don't have them on their web site and the only little store that sells them have to special order them, I don't know why????? They are the best.<BR/>And I agree the tijuana don't crumble. I eat them all the time, they are my favorite snack. I don't suggest eating them alone or after alcohol because like any spicy food, it doesn't mix well. I bought one at a gas station once and it was old...I really wanted it and thought it would be fine, but it was hard and didn't taste right. I eat about 4 a week and they never look like that. I love these things. They make you pucker up with a sour, hot taste.
